Temperatures are shifting. Hurricanes are more destructive. Forest fires are eliminating whole forests and communities. Tornado paths are evolving. Droughts are taking place where droughts never occurred, and in places where they happen, they are worse. I like to can and have been preserving tomatoes for more than a decade. These days, I cook the tomatoes at the peak in July, freeze them, and then can them in the fall or winter. You have to boil tomatoes in a canner for 45 minutes and, with our current summer humidity levels, that’s just brutal. Higher temperatures mean water doesn’t freeze as quickly when the seasons turn and it thaws more readily. If you don't get a consistent freeze, then the ice road doesn’t open early, and when it does, it doesn’t last as long. It can’t rest solely on individuals. While communities are stepping up, it’s time to see more concrete change at the institutional and corporate levels. Profits are at record highs, and so, too, are poverty and homelessness rates.
