She had intended the fourth to continue in this vein, tracing her grandmother Vera Paskova’s journey from Siberia, where she was born, to Uzbekistan and Ukraine. But then the pandemic hit, lockdowns happened and Hercules gave birth to her second son, Wilfred. Hercules wrote an essay, “Lime Tree Honey in the Air,” and sent it to her publisher. They hadn’t planned to include essays in the book, but were enthusiastic and she set out to write more.This advertisement has not loaded yet, but your article continues below.The gentle reflection on Hercules’s experiences living in Ukraine, Cyprus, Italy and England,is a balm — 100 recipes punctuated by personal essays and vignettes on comfort and connection, food and memory contributed by friends.

“I just kept thinking, ‘Is it a Ukrainian thing? Is it a universal thing?’ Then I went to my friend Caroline, who’s from Shropshire, and she totally immediately got the oniony apple thing, and told me about her story.
