Jaelyn Rice quickly outgrew her 'ghost kitchen' and began scouting out commercial kitchen availability

Before he died, Curtis told Rice that, if he ever opened up a business, it would be called The Laughing Lady Bar and Grill, in honour of Glynis, not only for her memorable laugh, but also her own desire to someday to have her own business.Rice, 22, did one year of the two-year culinary arts program at Holland College on Prince Edward Island before deciding she did not want to make a living as a chef.

“I thought that was the perfect name and it all went together really nice, so now the name is in memoriam to both my mom and my uncle, so that’s meaningful to me,” said Rice. “I was a little nervous about it, and I was not sure if this is what I should do or if I should just keep working,” she said. “I decided to take the full leap and open up a bakery and see how it goes.”Unique touches

She will also be offering a variety of handcrafted items made by friends and relatives, including greeting cards, clay earrings and candles, not to mention slippers and dish cloths handmade by Rice’s own grandmother, Beverley Rice.
