Funny, the things that you remember. A friend, not even really a friend, just a good acquaintance, was agonizing about what to serve her then-boyfriend, later-husband, one Valentine’s Day when we were university students. After much consideration, she decided on cherry danishes, as they were delicious, colourful and not time-consuming, an important factor for a conscientious student, which she was.
So, sweets it is. I could make rolled cookies, vanilla and/or chocolate, and cut them with heart-shaped cookie cutters, maybe even finish them with pink icing. Another possibility: chocolate layer cake baked in heart-shaped pans or a raspberry, cherry or cranberry pie. This cake batter is easy to prepare; no creaming sugar and butter, as it calls for oil instead of solid fat, and no alternating dry and liquid ingredients.
