ZAMBOANGA CITY wasn’t the vacation I had planned, but a work trip turned into an eye-opening experience that made me see the city in an entirely new light. It’s been years since my first flight, and the short hour-long flight from Manila felt like an eternity due to turbulence.

Despite past safety concerns, I felt safe. There were no unusual security measures to signal any threats, and with a few army personnel hanging around the airport, everything just seemed normal.I am usually a chatterbox, but from the moment I left the airport to my dinner and onto the hotel, I went quiet to just observe everything around me.
The only part that threw me off was the frequent and random brownouts. Even if I couldn’t tell if it was the generators or the local electric cooperative, thankfully, they did not last long. I also tried satti from the famous Jimmy’s shop, a skewered grilled meat with a jerk-seasoning-like flavor, drenched in a thick, spicy-sweet red sauce. While the sauce was intense, the rice wrapped in banana leaves balanced the spice and sweetness, explaining why this is a favorite among fishermen before heading to sea.Then there was the Knickerbocker, Zamboanga’s version of halo-halo.
