Preheat the oven to 200C/180C fan.
Leave the garlic to cool slightly until you are able to handle it. Using your fingers, squeeze the roasted garlic cloves out of their skins. Scoop the butter on to a large piece of baking paper and roll into a tight log. Store in the fridge for several weeks – or use it in the garlic bread recipe above.When garlic is slow-cooked in olive oil, something magical happens.
Place the garlic cloves, a generous amount of salt and the aromatics of your choice in an ovenproof dish and cover with the olive oil.
