Although the business is called the Taco Spot, it will serve more than its titular dish. A variety of Mexican foods will be available to customers, including quesadillas, burritos, chimichangas and nachos.
In his new restaurant, the Taco Spot in the County Fair Mall, Kirk Heckkner wants to provide customers with a variety of Mexican foods and accommodate a number of diets. To help bring some authenticity to his dishes, he has also been in contact with an Ontario-based Mexican cook to show him the ropes. - Kristin GardinerSUMMERSIDE, P.E.I. — Kirk Heckkner loves Mexican food so much he is opening a takeout restaurant dedicated to some of Mexicos’s most famous dishes.
Summerside, Heckkner feels, could benefit from having a spot that provides a healthier alternative to fast food. “I’m inspired to work for myself, and I’ve never worked harder in my life than when I’m working for myself,” he says. “So, I think that it’s just the right time for me to gain some more independence and shift gears, looking at a new career.”
“I think it's absolutely wonderful,” she says. “It’s nice that places like … the Taco Spot are going to be improving our community culture just by providing that variety and that unique experience that people are looking for.” Heckkner anticipates an opening day in early December. In the days leading up to that date, he feels both excited and terrified.
