Six local chefs offer up the dishes they’d prepare to introduce a novice to French cuisine
Growing up in St. Boniface, MB., gave me my first taste of French-Canadian cooking — split pea soup, sugar pie and tourtière, the savoury meat pie served at Christmas.
So you can understand my enthusiasm for the fifth annual Goŭt de/Good France, a March 21 promotion in which chefs at 3,300 restaurants in 150 countries across five continents will answer the call from Chef Alain Ducasse to celebrate French gastronomy. Catherine Stewart, Chef de Cuisine, Tableau Bar Bistro: “Beef Bourguignon with a gratin of Dauphinois and market vegetables — a simple dish that embodies the essence of French cuisine. I’d pair it with a red Burgundy, Aloxe-Corton or a Châteauneuf-du-Pape from the Rhone Valley.”
Michel Jacob, Chef/Owner, Le Crocodile: “A classic like escargots baked in pastry shells with a garlic-parsley butter or sautéed frogs’ legs. A Riesling or Muscat from Alsace where I was born would be perfect.” Jean-Francis Quaglia, Executive Chef, Provence Marinaside: Fish Soup with Gruyere Croutons and Rouille, a recipe from his mother, Suzanne, who was a prominent chef in Marseille. It’s served with rouille, a spicy, garlicky sauce.
