From choosing beans to storing them, it all impacts the end product, says local roaster
In his earlier days, Grimeau struggled with the hot, dark water that was passed off as coffee from many establishments.While temporarily living in Australia, he enjoyed thousands of delicious coffees, so he decided to improve his coffee knowledge and attended the Wolff College of Coffee, where he took roasting classes, sensory development classes and even some latte art classes.
Some coffee notes will be enhanced with a dash of milk or cream, while others will be obscured, he says. In terms of light versus dark roast, he says, it's a matter of personal preference. Lighter roasts will be more acidic than medium, and medium more than dark. “Once opened, a bag should be either used up in a couple of weeks or kept in a well-sealing container, cool and dry, and out of direct sunlight,” says Grimeau.
“I say the best way to enjoy a cup of coffee is the way that you have at hand or prefer to use,” says Grimeau.
