Like many vegetables, there are several varieties of summer squash. This one delivers a mild, buttery and slightly nutty flavour. Summer squash is so versatile. Although, I chose to stuff it, you can cut it in chunks and roast or sauté it, make squash veggie tots, squash croquettes, squash casserole or even summer squash soup — the possibilities are endless.I was prepared for a knife fight, but it was actually easy. Be safe and take your time while cutting it.
Once that’s done, cover the inside squash flesh with olive oil and sprinkle with a little salt and pepper. Then, place the two halves, cut side down on a parchment paper-lined baking sheet. Place them in the oven for about 10 minutes. Veggie or plant-based sausages can provide this dish with just as much flavour as meat sausages. Erin Sulley photo - Erin Sulley photo
