Make Denai Moore\u0027s cheesy \u0027beef\u0027 patties, sweet and sticky jerk carrots with feta, and potato salad with ackee curry mayo
Activate your Online Access Now“That was something that I really wanted to get right, and I went on this endless rabbit hole of how can I make a vegan version of a beef patty. And the recipe has changed loads,” says Moore from her home in Margate, a seaside town in southeast England.
In the book, Moore includes two patty recipes in the special occasions chapter “because these patties are a labour of love.” There’s a curry ‘chicken’ version, which calls for vegan chicken pieces, and the followingwhich uses plant-based crumbles and an umami-rich flavour paste made with equal parts miso, molasses, soy sauce and tomato paste.
“Jerk is delicious on most vegetables, and I feel like it shouldn’t just be reserved for chicken. In Jamaica, people have jerk pork and chicken and there’s this thing of what you prefer. But the spices are so wonderful — the pimento and the flavour of the Scotch bonnet and thyme. It’s one of my favourite things to eat,” she says.
