“It was hugely important for me to get out there to make sure that the weights I was suggesting, the kitchen setup I was suggesting, all that stuff, made sense in the field. If you’re an ultralight backpacker, and you’re doing a 63-day trip, some of these recipes you’re not going to bring. But a lot of them really will work — especially for the way most people backpack, which is an overnight trip, or two or three or even five nights. They totally work for that.
“Outdoors people have been told, and I certainly was told, and you see it every time you walk into an outdoors store, ‘You need to pack your food and cook and eat like you’re travelling to Everest base camp.’ It’s all dehydrated. It all weighs nothing. Your stove is a blowtorch, and good luck simmering anything, but, damn, will it boil water fast. And this is really beginning to change. You go into MEC or REI in the States and you’ll see better cookware, better stoves and so on.
“That’s how I used to do dinner parties, everything that day, and it was hellish. And it was actually this outdoors book and seeing my friends do it that made me realize, ‘Oh, there’s another way.’ And now I’m this relaxed dinner party cook — sort of relaxed. I love making
